Sjim Hendrix is a Dutch artist, chef, “food idealist” and creator of pop-up restaurants like Küche der Armen at the Gemeente Museum in The Hague. In his own words, “My pop-up restaurants are more like living sculptures, comprehensive works of art in which I conceal pop-up restaurants. […] As if I hadn’t had enough of Greek legends at high school, I ended up working for another legend, Dick Soek, a Michelin-starred chef and the best chef in the Nord today. He is the founder of vernacular cuisine in the Netherlands. With him, I became a real chef and developed my own taste. […] Then I spent three years at the Rietveld Academy, obtaining a postgraduate degree in social design from the No Academy. That was where I met radical and highly idiosyncratic artists like Paul Gofferjé, Martijn Engelbregt and Jonas Staal, all working at the interface between art and the real world. Ever since my first solo exhibition at W139 in Amsterdam, I have been building bridges between gastronomy and art and bringing down the border between exhibition space and restaurant.”
